Chili is one of my favorite meals to serve my family. We eat it once a week during the fall and winter. It is easy to make and almost everyone loves it.
It is also easy to make gluten free. As long as you read labels to be sure the ingredients are gluten free it should be gluten free. That means it is normal food that just happens to be gluten free. I love recipes like that.
It is also dairy free, unless you add cheese. That makes it normal food that is gluten free and dairy free.
Chili is also one of my favorite meals to serve company or take to a potluck type dinner. It is so easy to make and everyone loves it. You can keep in warm in a crock pot and it is ready to eat when you need it.

This Green Enchilada Chili is simply a white chili made with green enchilada sauce.
It is not a classic tomato or chili based chili, but it is so good.

Chili is easy to change up. That is one of the reasons that I love it. It can be a classic tomato based chili. Or it can be a chili without beans.
You can make a white chicken chili or a white chicken chili without beans.
Turkey chili and sausage chili are other ways to change it up. We even make breakfast chili.

Slow Cooker Green Enchilada Chili with Chicken
Slow Cooker Green Enchilada Chili is an easy to make dinner that your family is sure to love.
Ingredients
- 4 cups cooked chicken, shredded or cut into chunks
- 1 clove garlic minced
- 1- 14.5 ounce can chicken broth
- 2 - 15.5 ounce cans white chili beans
- 1 - 10 ounce can green enchilada sauce
- 1 - 4 ounce can diced green chilis
Instructions
- Combine all ingredients in a slow cooker.
- Stir well.
- Cook on low for 3-4 hours.
- Serving with shredded cheese and sour cream if desired.

To make this gluten free be sure to read labels to make sure your ingredients like white chili beans and green enchilada sauce are gluten free.
